Took a bit of a break from posting, but continued to bake up a storm. Here is a short synopsis of the new recipes that i have made:
This spring we were blessed with visitors from out of town so i decided to make a special dessert just for the occasion.
Coconut pudding in phyllo cups
The phyllo cups were made by cutting phyllo pastry in squares and layering them in a muffin tin. I found that if i turned each layer a quarter turn, they would layer and give a flower look. Three layers is all it took as to not be to thick.
The pudding I made from scratch, the whip cream from a can, and i topped it off by toasting cococut.
Very light dessert and eye appealing!
Chive and cheese bread
This was tasty bread that i made using the usual bread recipe for the bread maker, just added cubbed old chedder cheese and 1/4 cup of chives. The problem with using the bread maker was that it melted the cheese and chewed up the chives to almost none existant! The flavor was there, but next time i would just make it "the old fasioned" way :) Since making the bread form, i have made buns with cheese and it was fantastic! unfortunately i forgot to snap a picture!
I need to check my scraps of paper to see what else i made. The problem is i do not remember to snap the picture before serving my family! Until later.........God bless! :)

This weeks new recipes to try!
I love trying new recipes and try to do at least one new recipe a week. Most of the time they work out, there are times that I wonder why I wasted my time :)

I can already tell I will be improvising, as i do everything from scratch and
this recipe calls for biscuit mix.
Dessert! hmm so many options! 1-2-3 cake is the choice, found here:

This recipe is one that will be handy for the kids afterschool, to make it
themselves and have a warm chocolately treat on a cold day sounds wonderful!
I will try to remember to take a picture and post the results of what how they turn out, for future reference for myself and friends :()
Results of the 1-2-3 cake: It turned out great, i would say there will be more than two dozen mugs of cake can be made out of one batch, i baked it for only 40 seconds. It is moist
and puffed up (as you can see in the picture). The taste is good, as a tang like most angel food cakes do. Deffinately will make again.

Menu Planner
So I decided that instead of writing in a coil scribbler, i would make a nice scrabook page to hang on the fridge to organize my meals.
I have been asked why i organize my meals per week and also why do I have a months worth of menus. Well for one it saves money! and who doesn't like to save a few pennies. When you make a list of the meals you want to eat for the month, make a shopping list, check your pantry and head off to the grocery store during 10% off tuesday, you will be amazed how much you can save! I do still have to head to the grocery store once a week to buy fresh veggies and dairy, but it will help from wondering the isles and giving in to the cravings.
To make the monthly menu planner to work, you need to be flexible. On a night where I have soup planned, and we don't feel like soup, i will pull out a recipe from a different day and replace it, knowing i have the ingredients in my pantry to make it.
So as you can see from my picture, i have the days of the week listed and across the recipe card ready to be pulled and used. This is more of a benefit for my kids who want to help cook, most of the meals I prepare from my head. There is room for a pad of paper to put the shopping list on, just have to get to the dollar store to get one!
